A quick, satisfying one-pan meal featuring tender chicken, bright veggies, and a silky garlic-cream sauce, perfect for busy weeknights.

Ingredients

Scale
  • 4 breasts chicken (substitute with chicken thighs for added flavor)
  • 2 tablespoons olive oil (can be swapped with avocado oil)
  • 3 cloves minced garlic (fresh garlic recommended)
  • 4 ounces cream cheese (use coconut cream for dairy-free)
  • 1 cup mozzarella cheese (try dairy-free cheese for lactose-free)
  • 1 tablespoon Italian seasoning (fresh herbs can be used)
  • 2 cups broccoli florets (can replace with asparagus or green beans)
  • 1 cup cherry tomatoes (red bell peppers are an alternative)
  • 2 cups spinach (kale or Swiss chard also work)
  • Salt to taste (customize based on dietary needs)
  • Black pepper to taste (adjust to taste)

Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, and half the Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken and cook 4 to 6 minutes per side, until golden and almost cooked through. Transfer to a plate and tent with foil.
  4. Reduce heat to medium. Add the minced garlic to the same skillet and cook 30 to 45 seconds until fragrant.
  5. Lower heat to medium-low. Add the cream cheese and stir until it melts and becomes a smooth sauce. Add a splash of water or broth if needed to loosen.
  6. Stir in the remaining Italian seasoning, then fold in the broccoli florets and cherry tomatoes. Cook 3 to 4 minutes until broccoli is bright and slightly tender.
  7. Add the spinach and stir until wilted, about 1 to 2 minutes.
  8. Return the chicken to the skillet, nestling pieces into the sauce. Sprinkle the mozzarella over the top.
  9. Cover the skillet for 2 to 3 minutes, or transfer briefly to a hot oven (350°F / 175°C) just until cheese melts and chicken reaches an internal temperature of 165°F (74°C).
  10. Taste and adjust salt and pepper. Serve immediately.

Notes

If using thighs, trim excess fat for even cooking. For a lighter sauce, opt for low-fat cream cheese. Fresh garlic is highly recommended for flavor.
