This Garlic Parmesan Roasted Shrimp is quick, easy, and perfect for busy weeknights or entertaining. Plump shrimp are roasted to perfection with a crunchy, cheesy topping.

  • 1 lb large shrimp (peeled and deveined, tails on)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced (or 1 tsp garlic powder)
  • 1/3 cup grated Parmesan cheese (finely grated)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the shrimp with olive oil, minced garlic, smoked paprika, salt, and pepper until coated.
  3. Sprinkle grated Parmesan and chopped parsley over the shrimp, gently tossing to stick the cheese without crushing the shrimp.
  4. Spread the shrimp in a single layer on the prepared baking sheet, leaving space between pieces.
  5. Roast for 8 to 10 minutes, until the shrimp are opaque, curled slightly, and the edges are golden.
  6. Transfer to a platter, serve immediately with lemon wedges for squeezing over the top.

Notes

For extra crunch, broil for an additional 1 to 2 minutes at the end, keeping a close watch to prevent burning.
