A delightful meatloaf that combines ground beef, breadcrumbs, and fresh herbs for a moist and flavorful dish.

Ingredients

  • 1 lb Ground beef
  • 1 cup Breadcrumbs
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 large Eggs
  • 1/2 cup Milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 cup Ketchup
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1/4 cup Fresh parsley, chopped
  • 1/2 cup Ketchup (glaze)
  • 1/4 cup Brown sugar
  • 1 tbsp Dijon mustard (glaze)
  • 1 tbsp Worcestershire sauce (glaze)
  • 1 tbsp Apple cider vinegar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan.
  2. Sauté the chopped onion and minced garlic in a bit of oil over medium heat until soft, about 3-5 minutes.
  3. Combine the ground beef, breadcrumbs, sautéed onion and garlic, eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and fresh parsley in a large bowl. Mix until just combined.
  4. Transfer the meat mixture to the prepared loaf pan, shaping it into a loaf.
  5. Mix together the glaze ingredients: ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar in a separate bowl. Spread this glaze over the meatloaf.
  6. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (71°C).

Notes

Rest the meatloaf for a few minutes after baking for easier slicing. Use lean ground beef for a healthier option.
