Bright, satisfying Greek chicken bowls layered with juicy chicken, quinoa or brown rice, crisp vegetables, feta, and refreshing tzatziki sauce.

Ingredients

  • 1 lb chicken breast
  • 2 cups cooked quinoa or brown rice
  • 1 cucumber, diced
  • 1 cucumber, grated for tzatziki
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted
  • 2 cups spinach or mixed greens
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare grains by cooking quinoa or brown rice according to package directions; set aside to cool slightly.
  2. Cook the chicken by seasoning it with salt, pepper, and olive oil, then grill or bake until cooked through.
  3. Make the tzatziki by grating cucumber, squeezing out excess moisture, and mixing with Greek yogurt, garlic, dill, olive oil, salt, and pepper.
  4. Prep vegetables by dicing cucumber and bell pepper, halving cherry tomatoes, and slicing red onion.
  5. Assemble bowls with quinoa or brown rice, top with greens, vegetables, sliced chicken, crumbled feta, and olives. Spoon tzatziki over or serve on the side.
  6. Serve immediately or store components separately for meal prep.

Notes

Opt for Greek yogurt for thickness in tzatziki. Store components separately for the best texture when reheating. Chicken should rest after cooking for juicier slices.
