Delightful roasted baby potatoes infused with fresh lemon and garlic, perfect as a side dish for any meal.

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.
  3. Add the baby potatoes to the bowl and toss until they are well coated with the mixture.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 30-35 minutes, or until the potatoes are golden brown and fork-tender, turning them halfway through cooking.

Notes
