This Mongolian-style noodle bowl features ground beef in a sweet-savory sauce, served over linguine and garnished with green onions. It’s quick, family-friendly, and perfect for busy weeknights.

  • 1 lb ground beef (80/20 or 85/15)
  • 5 cloves garlic, minced
  • 1/3 cup brown sugar
  • 1/4 cup beef broth
  • 1/3 cup soy sauce
  • 3 tablespoons hoisin sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • Pinch of red pepper flakes (optional)
  • 10 oz linguine
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 green onions, sliced for garnish

Instructions

  1. Whisk together the soy sauce, beef broth, hoisin, brown sugar, ground ginger, black pepper, and red pepper flakes. Set the sauce aside.
  2. Bring a large pot of salted water to a boil. Cook the linguine until al dente according to package directions, reserving 1 cup of the pasta water before draining.
  3. Heat a large skillet or wok over medium-high heat. Add the ground beef and brown, breaking it up until no pink remains.
  4. Drain excess grease from the skillet. Return the pan to the heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  5. Pour the prepared sauce over the browned beef and garlic. Let it simmer for 2 to 3 minutes.
  6. Whisk together the cornstarch and water in a small bowl to make a slurry. Stir it into the skillet and cook for 1 to 2 minutes until the sauce thickens.
  7. Add the drained linguine to the skillet, tossing gently to coat with sauce. If too thick, add reserved pasta water to adjust consistency.
  8. Serve immediately and garnish with sliced green onions.

Notes

Swap ground turkey or chicken for leaner meat, or use tamari for a gluten-free version. Adding a splash of toasted sesame oil at the end enhances the flavor.
