Ground Turkey and Peppers

A quick one-skillet meal featuring lean ground turkey, colorful bell peppers, and warm spices, ready in under 30 minutes.

Ingredients

  • 1 lb ground turkey
  • 2 to 3 bell peppers, chopped (mixed colors)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Cooked rice or lettuce leaves or taco shells for serving

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until translucent, about 2 to 3 minutes.
  3. Increase heat to medium-high and add the ground turkey. Cook until browned, about 6 to 8 minutes.
  4. Stir in the chopped bell peppers, chili powder, cumin, salt, and pepper. Mix thoroughly.
  5. Reduce heat to medium-low, cover, and cook until peppers are tender, about 6 to 8 minutes.
  6. Taste and adjust seasoning. Serve hot over rice, in lettuce wraps, or in taco shells.

Notes

For added heat, include crushed red pepper or jalapeño. Use low-sodium broth for a lower-sodium meal.
