Ground Turkey Goulash

A quick and comforting one-pot skillet goulash made with ground turkey, elbow macaroni, bell peppers, and tomatoes.

Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups elbow macaroni
  • 2 cups beef or chicken broth (low-sodium preferred)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional; cheddar or mozzarella)

Instructions

  1. Heat a large pot over medium heat. Add a splash of oil, then sauté the chopped onion and minced garlic until the onion is translucent and fragrant, about 3–4 minutes.
  2. Add the ground turkey. Break it up with a spoon and cook until no longer pink and starting to brown, about 5–7 minutes. Season lightly with salt and pepper as it cooks.
  3. Stir in the chopped bell pepper and the can of diced tomatoes (with their juices). Pour in the broth, then add the Italian seasoning and a little more salt and pepper to taste.
  4. Bring the mixture to a gentle boil. Add the elbow macaroni and stir to prevent clumping.
  5. Reduce the heat to low, cover the pot, and simmer for 10–12 minutes, stirring once or twice until the macaroni is tender. If too thick, add a splash of broth or water.
  6. Remove from heat. Stir in the shredded cheese until melted and creamy (optional). Serve hot.

Notes

Substitute elbow macaroni with small shells or rotini if preferred. For a lower-sodium version, use reduced-sodium broth and adjust added salt.
