2 large sweet potatoes, peeled and diced (about 1/2-inch pieces)
1 cup mixed vegetables (bell peppers, zucchini, carrots)
1 onion, diced
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper

Instructions
Preheat the oven to 400°F (200°C).
Heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3 to 4 minutes.
Add the ground turkey, breaking it up with a spoon and cooking until no pink remains, about 6 to 8 minutes. Season with salt, pepper, and paprika.
