1 pound ground turkey
2 large sweet potatoes
1 tablespoon olive oil
1 medium onion
2 cloves garlic
1 medium red bell pepper
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried thyme
Salt and black pepper to taste
1 cup shredded mozzarella or cheddar cheese
1/4 cup fresh parsley or cilantro for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Lightly oil a 9×9-inch baking dish.
Peel and cube the sweet potatoes into 1/2-inch pieces, toss with oil, salt, and pepper, and roast on a sheet pan for 15 to 20 minutes until fork-tender.
Heat olive oil in a large skillet over medium heat and cook diced onion until translucent, about 4 minutes.
Add garlic and diced red bell pepper, cooking for another 2 minutes until fragrant.
Increase heat to medium-high and add ground turkey, breaking it up and cooking until no longer pink, about 6 to 8 minutes.
Stir in smoked paprika, ground cumin, dried thyme, salt, and black pepper, cooking for another minute to bloom the spices.
Combine the cooked sweet potatoes and turkey mixture in the prepared baking dish, and sprinkle cheese over the top.
Bake uncovered for 10 to 15 minutes until cheese is melted and edges are bubbling.
Let the bake rest for 5 minutes, then garnish with parsley or cilantro before serving.
