A quick and nutritious one-pan meal featuring ground turkey, sweet potatoes, and a smoky seasoning blend. Perfect for busy weeknights.

  • 1 pound ground turkey
  • 2 cups diced sweet potatoes (about 1 large)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 teaspoon kosher salt
  • 1 teaspoon chipotle chili powder (reduce to 1/2 teaspoon for less heat)
  • 1 teaspoon ground cumin
  • Toppings: shredded cheddar cheese, sliced green onions, diced tomato, sour cream, salsa

Instructions

  1. Dice sweet potatoes into 1/2-inch cubes and microwave covered with a damp paper towel for 5 minutes.
  2. In a small bowl, combine sour cream and salsa; set aside.
  3. Heat a large skillet over medium-high heat. Add ground turkey and cook until slightly pink, about 5 minutes.
  4. Stir in microwaved sweet potatoes and black beans, adding salt, chipotle chili powder, and cumin. Toss to combine.
  5. Cook for 5 more minutes until heated through. Adjust seasoning as needed.
  6. Remove from heat and sprinkle with shredded cheddar. Top with sliced green onions, diced tomato, and sour cream-salsa sauce before serving.

Notes

For a vegetarian option, swap ground turkey for ground chicken or a plant-based crumble. Use smoked paprika and cayenne in place of chipotle chili powder if needed.
