Ground Turkey Taco Skillet

A quick and easy one-pan meal featuring lean ground turkey, sweet peppers, and black beans, perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups diced tomatoes (fresh or canned)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheese, avocado, sour cream, cilantro

Instructions

  1. Heat a large skillet over medium heat and add a splash of olive oil.
  2. Add the diced onion and bell pepper. Sauté for 4 to 5 minutes, until they soften and the onion becomes translucent.
  3. Push the vegetables to one side and add the ground turkey. Break it up with a spatula. Cook until the turkey is browned and no longer pink, about 6 to 8 minutes.
  4. Stir the vegetables and turkey together. Add the black beans, corn, and diced tomatoes. Sprinkle in the taco seasoning, then season with salt and pepper to taste.
  5. Reduce the heat to low and let the mixture simmer for 5 to 10 minutes, stirring occasionally, until everything is heated through and flavors meld.
  6. Taste and adjust seasoning if needed. Serve directly from the skillet, spoon into taco shells, or make bowls with rice or greens.

Notes

For fewer splatters and less fat, use lean ground turkey. Adjust taco seasoning based on saltiness.
