A quick and nutritious one-pan dinner featuring ground turkey, beans, corn, and vibrant vegetables, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground turkey
  • 1 onion, chopped (yellow or sweet)
  • 1 bell pepper, diced (any color)
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and diced bell pepper. Cook, stirring occasionally, until softened and fragrant, about 4 to 5 minutes.
  3. Push the vegetables to the side and add the ground turkey. Break it up and cook until no longer pink and lightly browned, about 6 to 8 minutes.
  4. Sprinkle the taco seasoning over the turkey and stir to coat evenly.
  5. Pour in the diced tomatoes, drained black beans, and drained corn. Stir everything together until combined.
  6. Reduce the heat to medium-low and simmer for 5 to 10 minutes so flavors meld and the mixture heats through.
  7. Taste and season with salt and pepper. Serve straight from the skillet, in warmed tortillas, over rice, or as a hearty bowl with toppings of your choice.

Notes
