A delightful and easy dish that combines tender chicken breasts with sweet pineapple, perfect for busy weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Place the chicken in the slow cooker.
  2. Mix the pineapple chunks, soy sauce, brown sugar, ketchup, and minced garlic in a bowl.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Add the sliced onion and bell pepper on top.
  5. Season with salt and pepper.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.

Notes

For best results, use fresh pineapple. Adjust the brown sugar to taste. Consider adding jalapeños for a spicy kick.
