  • 1 cup (245g) full-fat plain Greek yogurt
  • 1 cup (120g) all-purpose flour
  • 2 teaspoons baking powder
  • 2 large eggs, room temperature
  • ½ cup (120ml) whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey (optional)
  • ¼ teaspoon salt

Instructions

  1. Preheat a nonstick skillet or griddle over medium heat for about five minutes.
  2. Whisk the flour, baking powder, and salt in a medium bowl until evenly mixed.
  3. Combine Greek yogurt, eggs, milk, vanilla, and maple syrup or honey in a large bowl and whisk until smooth.
  4. Fold the dry ingredients into the wet ingredients gently until just combined.
  5. Scoop about ¼ cup (60ml) of batter onto the hot skillet.
  6. Cook until bubbles form and edges look set, about 2 to 3 minutes.
  7. Flip and cook for another 1 to 2 minutes until golden.
  8. Transfer cooked pancakes to a baking sheet and keep warm in a low oven.

Notes

Use low-fat Greek yogurt for fewer calories, or substitute the flour with a gluten-free option for a gluten-free pancake.
