A quick and vibrant salmon dish featuring fresh Mediterranean toppings, perfect for weeknight dinners or entertaining guests.

Ingredients

  • 4 fillets salmon
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 2 cloves minced garlic
  • 2 tablespoons lemon juice
  • 1 cup cherry tomatoes
  • 1/2 cup green olives
  • 1 cup cucumber
  • 1/4 cup parsley
  • 1/4 cup basil
  • 1/2 cup feta cheese (optional)

Instructions

  1. Pat the salmon dry and season with salt, pepper, and oregano.
  2. Heat 1 tablespoon olive oil in a nonstick skillet over medium-high heat.
  3. Add salmon fillets skin-side down if they have skin. Sear 4 to 5 minutes without moving.
  4. Flip the fillets and cook 3 to 5 more minutes, until the fish flakes easily with a fork and reaches about 125 to 130°F for medium, or 145°F if fully cooked.
  5. While the salmon cooks, combine tomatoes, olives, cucumber, parsley, basil, minced garlic, lemon juice, and remaining olive oil in a bowl. Toss gently.
  6. Taste the topping and adjust salt and lemon as needed.
  7. Remove salmon from the pan and let rest for a minute. Spoon the Mediterranean mixture generously over each fillet.
  8. Scatter feta on top if using and serve immediately.

Notes

For dairy-free guests, omit feta and boost acidity with extra lemon.
