Hearty Chicken Veggie Soup

A wholesome chicken soup filled with vegetables, perfect for quick weeknight dinners and light lunches.

Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup onion, chopped
  • 2 cups spinach or kale
  • 2 cloves garlic, minced
  • 1 tsp thyme, dried
  • 1 tsp rosemary, crushed
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat 1 to 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, sliced carrots, and sliced celery. Sauté until the vegetables have softened, about 5 to 7 minutes.
  3. Push the vegetables to the side, add the diced chicken, and cook until the chicken is no longer pink, about 4 to 6 minutes.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Sprinkle in the thyme, rosemary, and a pinch of salt and pepper. Adjust seasoning as it cooks.
  6. Stir in the spinach or kale and simmer for an additional 10 minutes until the greens are tender.
  7. Taste and adjust salt and pepper as needed. Serve warm.

Notes

Naturally gluten-free. To make heartier, add 1 cup cooked rice, barley, or small pasta near the end of cooking.
