A nutritious and comforting casserole featuring lean ground turkey, fresh spinach, and creamy cheeses, perfect for a satisfying family dinner.

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: mozzarella instead of cheddar

Instructions

  1. Preheat the oven to 375°F and grease a 9″x9″ baking dish.
  2. Cook ground turkey in a skillet over medium heat for 6–8 minutes, breaking it up as it cooks.
  3. Stir in garlic powder, salt, and pepper.
  4. Add spinach and cook until wilted, about 2–3 minutes.
  5. Reduce the heat to low and stir in softened cream cheese until fully melted and combined.
  6. Let the mixture cool for 5 minutes, then stir in the beaten egg and ½ cup cheddar cheese.
  7. Transfer the mixture to the prepared baking dish and top with the remaining ½ cup of cheddar.
  8. Bake uncovered for 20–25 minutes until bubbly and golden on top.

Notes

For added flavor, consider using fresh herbs or low-fat cream cheese. Let the casserole cool slightly before slicing for neat portions.
