Hobo Casserole Ground Beef

A one-dish, family-friendly bake combining layers of seasoned ground beef, thin potato slices, and melty cheese for a comforting meal.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced (Yukon Gold or russet)
  • 1 1/2 cups shredded cheddar cheese (sharp or mild)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for extra creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 lb ground beef. Break the meat apart and cook until no pink remains, about 5–7 minutes. Drain excess fat if needed.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is soft and translucent, about 3–4 minutes. Season the beef mixture with a pinch of salt and pepper.
  4. Spread the cooked beef mixture evenly across the bottom of the prepared baking dish. Arrange the thinly sliced potatoes in a single layer (or slightly overlapping rows) on top of the beef.
  5. Sprinkle 1 teaspoon dried Italian seasoning, 1/2 teaspoon paprika, and additional salt and pepper over the potatoes.
  6. Scatter 1 1/2 cups shredded cheddar and 1/2 cup grated Parmesan over the potatoes. Pour 1/2 cup beef broth around the edges of the dish so the liquid reaches the bottom but does not wash away the cheese. If you want a creamier bite, drizzle 1/4 cup milk over the top.
  7. Cover the casserole tightly with aluminum foil. Bake for 30 minutes. Remove the foil and bake an additional 15–20 minutes. The potatoes should be tender and the cheese bubbly and golden.
  8. Let the casserole rest 5 minutes, garnish with chopped fresh parsley if you like, then serve hot.

Notes

For a heartier meal, serve with warm crusty bread or dinner rolls. This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking.
