Honey BBQ Chicken Rice

A flavorful and easy weeknight dish that combines juicy chicken, comforting rice, and a sweet-savory sauce.

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for about 3 to 4 minutes per side until golden brown, then remove and set aside.
  3. In a small bowl, mix the BBQ sauce and honey together.
  4. Toast the uncooked rice in the same skillet for about 1 to 2 minutes.
  5. Add the chicken broth and half of the sauce mixture, stirring to combine.
  6. Return the chicken to the pan and pour the remaining sauce over the top, then cover and simmer on low heat for 15 minutes.
  7. Add mixed vegetables (if using), cover again, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
  8. Let sit for about 5 minutes before garnishing with chopped green onions and serving hot.

Notes

For added flavor, marinate the chicken in the sauce mixture for at least an hour before cooking. You can also add pineapple chunks for a tropical twist.
