Honey BBQ Chicken Rice

A one-pan dinner featuring tender chicken thighs and fluffy rice cooked in a sweet honey BBQ sauce, perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken thighs (about 4 thighs)
  • 1 cup long-grain rice, rinsed
  • 2 cups low-sodium chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables, frozen or fresh (optional)
  • Chopped green onions for garnish

Instructions

  1. Pat the chicken dry and season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat with a little oil. Sear the chicken 3 to 4 minutes per side until golden. Remove the chicken and set aside.
  3. Whisk together BBQ sauce, honey, soy sauce, and minced garlic.
  4. Return the skillet to medium. Add the uncooked rice and toast for 1 to 2 minutes.
  5. Pour in the chicken broth and half of the prepared sauce. Stir to combine.
  6. Nestle the seared chicken back into the pan and spoon the remaining sauce over the top.
  7. Cover the pan, reduce heat to low, and simmer gently for 15 minutes.
  8. Stir in the mixed vegetables, cover again, and cook for 5 more minutes.
  9. Remove from heat and let rest for 5 minutes. Garnish with chopped green onions and serve hot.

Notes

For leaner meat, swap chicken thighs for boneless skinless breasts but watch the cooking time. Adjust cooking time for brown rice.
