Honey Butter Skillet Corn

A quick and comforting side of sweet, buttery corn with honey and cream cheese for richness.

Ingredients

  • 2 cups frozen corn (thawed slightly or straight from the freezer)
  • 2 tablespoons honey (mild-flavored honey works best)
  • 2 tablespoons butter (unsalted or salted)
  • 4 ounces cream cheese (softened for easier melting)
  • Salt and pepper to taste

Instructions

  1. Place a skillet over medium heat and add the butter. Let it melt and foam but do not let it brown.
  2. Add the frozen corn and stir to coat with butter. Cook for 5 to 7 minutes, stirring occasionally, until the corn is heated through and some kernels show slight color.
  3. Reduce the heat to low. Add the honey and spoon in the softened cream cheese. Stir continuously until the cream cheese melts and the corn is evenly coated and creamy.
  4. Taste and season with salt and freshly ground black pepper. Adjust honey if you prefer it sweeter.
  5. Serve the corn warm as a side dish right from the skillet or transfer to a serving bowl.

Notes

You can use thawed fresh or canned corn if preferred. For a lighter version, substitute half of the cream cheese with plain Greek yogurt after the pan is off the heat.
