A refreshing combination of grilled chicken with a honey-lime marinade served over a bed of rice, topped with avocado and cherry tomatoes.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons honey
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 cup cooked rice
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Mix honey, lime juice, olive oil, salt, and pepper in a bowl.
  2. Marinate the chicken breasts in this mixture for at least 30 minutes.
  3. Cook the chicken on a grill or in a skillet over medium heat until the internal temperature reaches 165°F.
  4. Layer the cooked rice in a serving bowl.
  5. Top the rice with diced avocado and cherry tomatoes.
  6. Slice the cooked chicken and serve on top of the rice.
  7. Garnish with fresh cilantro for added flavor.

Notes

Consider using brown rice or quinoa for a different flavor and texture. Let the chicken marinate longer for a more intense flavor.
