A wholesome and satisfying bowl meal with protein-packed chicken, zesty honey-lime sauce, and creamy avocado over fluffy rice.

  • 2 large chicken breasts (about 400g)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Whisk together the honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and black pepper in a bowl.
  2. Add the chicken breasts to the marinade and let them soak for 10 to 15 minutes.
  3. Heat a skillet over medium heat and cook the chicken for 5 to 7 minutes on each side until golden and cooked through.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  5. Prepare bowls by adding a base of warm rice.
  6. Arrange the sliced chicken over the rice.
  7. Top the bowls with avocado, tomatoes, corn, and red onion.

Notes

Let the chicken marinate longer for more intense flavors. Slice the chicken just before serving to keep it juicy.
