  • 4 chicken breasts (boneless, skinless)
  • 3 tablespoons honey
  • 2 limes, zest and juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lime juice (for salsa)
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Whisk the marinade: in a bowl, combine honey, lime zest, lime juice from the 2 limes, minced garlic, olive oil, salt, and pepper until smooth.
  2. Marinate the chicken: place chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Turn to coat and refrigerate for at least 30 minutes and up to 4 hours.
  3. Prepare the salsa: while chicken marinates or cooks, mix diced mango, red onion, 1 tablespoon lime juice, and chopped cilantro in a bowl. Season lightly with salt and let sit so flavors meld.
  4. Cook the chicken: heat a skillet over medium-high heat with a little oil, or preheat a grill. Remove excess marinade from the chicken and cook 5 to 7 minutes per side for average-thickness breasts, until golden and internal temperature reaches 165°F (74°C).
  5. Rest and finish: let the cooked chicken rest 5 minutes to retain juices. Spoon the mango salsa over each breast right before serving.
