Tender chicken breasts baked with a sweet and tangy honey mustard glaze, perfect for a cozy weeknight dinner or entertaining guests.

  • 1.5 pounds boneless (skinless chicken breasts)
  • 1 teaspoon plus one tablespoon olive oil
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • 1 teaspoon minced garlic
  • ¼ cup chicken broth
  • 2 tablespoons honey mustard
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the chicken breasts in half lengthwise to create thin filets.
  3. In a small bowl, combine one teaspoon of olive oil with parsley, basil, salt, paprika, and minced garlic. Brush this mixture on both sides of each chicken breast.
  4. Heat one tablespoon of olive oil in an oven-safe pan over medium heat. Add the chicken breasts and sear both sides, about 3 minutes per side.
  5. In another small bowl, mix together the chicken broth, honey mustard, and honey. Pour this sauce over the chicken breasts.
  6. Place the pan in the preheated oven. Cook for 20 minutes, flipping the chicken halfway through the cook time. When the time is up, turn on the broiler and broil the chicken for around 5 minutes, until it begins to brown.

Notes

Let the chicken fully cook for juiciness. Use fresh herbs for better flavor. Adjust honey mustard for desired sweetness.
