Hot Honey Chicken Biscuits

Delicious warm biscuits filled with buttermilk-marinated fried chicken strips and drizzled with spicy hot honey.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 pound chicken breasts, cut into strips
  • 1 cup buttermilk (for marinating)
  • 1 cup all-purpose flour (for frying)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)
  • 1/2 cup honey
  • 12 teaspoons hot sauce (to taste)

Instructions

  1. Preheat the oven to 450°F (230°C). Line a baking sheet or lightly grease it.
  2. In a mixing bowl combine 2 cups flour, baking powder, and 1/2 tsp salt. Add cold cubed butter and work until the mix looks like coarse crumbs.
  3. Pour in 3/4 cup milk and stir until just combined. Turn onto a lightly floured surface, pat to 3/4-inch thickness, and cut into rounds or squares.
  4. Place biscuits on the baking sheet and bake for 12–15 minutes until golden on top. Keep warm.
  5. Marinate chicken strips in buttermilk for at least 30 minutes.
  6. Mix 1 cup flour, paprika, and salt and pepper in a shallow dish. Dredge marinated chicken in seasoned flour.
  7. Heat oil in a skillet. Fry chicken in batches until golden and cooked through, about 3–4 minutes per side.
  8. Warm honey in a saucepan and stir in hot sauce.
  9. Assemble the sandwiches by splitting biscuits, adding fried chicken, and drizzling with hot honey.
  10. Serve immediately for best texture.

Notes

For a gluten-free version, use a cup-for-cup GF flour blend. Keep butter cold for flaky biscuits.
