Savor the umami flavors with these grilled chicken thighs, marinated in a savory soy sauce and brown sugar mixture, creating a deliciously comforting dish.

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Mix together the soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger to create the marinade.
  2. Place the chicken thighs in a zip-top bag or shallow dish and pour the marinade over them.
  3. Seal or cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Season the chicken with salt and pepper.
  7. Grill the chicken thighs skin-side down for about 6-7 minutes, until nicely charred.
  8. Flip and grill for another 6-7 minutes, or until cooked through and reaches an internal temperature of 165°F (75°C).
  9. Rest before serving to retain juiciness.
