  • 2 large eggs
  • 1 cup (225 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams) unsalted butter
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (60 mL) water
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter with granulated and powdered sugars until light and fluffy.
  3. Beat in the eggs, vanilla extract, and optional butter extract until well combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually fold these dry ingredients into the wet mixture until just combined.
  5. Shape the dough into uniform 1.5-inch spheres, spacing them well on the prepared baking sheets.
  6. Flatten each ball to form a disk using your palm or a spoon.
  7. Bake for 10-12 minutes or until the edges are set but the centers are still slightly soft.
  8. Cool the cookies on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
