  • 1 box yellow cake mix (15.25 oz)
  • 1 cup water
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 package lime-flavored gelatin mix (3 oz)
  • 1 cup key lime juice (bottled or fresh)
  • ¾ cup white sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 tablespoon lime zest
  • Green food coloring (optional)
  • 1 container whipped topping (8 oz, thawed)
  • Extra lime zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine the cake mix, water, vegetable oil, and eggs in a large bowl. Beat the mixture for 2 minutes until smooth.
  3. Pour the batter into the prepared baking dish and bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  4. Cool the cake for 10 minutes. Use a wooden spoon handle or skewer to poke holes all over the cake, about an inch apart.
  5. Whisk together the gelatin mix, key lime juice, sugar, and cornstarch in a saucepan over medium heat. Stir constantly for 3 to 5 minutes until slightly thickened.
  6. Remove from heat, add the butter and lime zest, stirring until smooth. Add green food coloring if desired.
  7. Pour the warm lime filling over the cake, ensuring it seeps into the holes. Let it cool, then chill for at least 2 hours.

Notes

For best flavor, use fresh key limes. Chill the cake overnight for optimal taste.
