1 lb ground beef (85/15 or leaner)
2 cloves garlic, minced
1 inch fresh ginger, grated
1/4 cup soy sauce (low-sodium preferred)
2 cups cooked rice (white, brown, or sushi rice)
1 tablespoon sesame oil
1/2 cup green onions, chopped
Sesame seeds for garnish
Instructions
Heat a large skillet over medium heat and add the sesame oil.
Add the ground beef in an even layer. Break it up with a spoon. Cook, stirring occasionally, until fully browned and no longer pink, about 6 to 8 minutes. If there is excess fat, spoon some out.
Push the beef to one side and add the minced garlic and grated ginger. Stir immediately and cook for 30 to 60 seconds until fragrant.
Pour in the soy sauce and stir to combine. Let the mixture cook for 2 to 3 minutes to reduce slightly.
Spoon the beef over warm rice. Scatter chopped green onions and a sprinkle of sesame seeds on top. Serve right away.
Notes
For gluten-free, swap soy sauce with tamari. For less sodium, start with 3 tablespoons of soy sauce and adjust taste.
