A unique dessert combining tangy lemon flavor, sweet blueberries, and creamy cheesecake in a cozy cake form.

Ingredients

  • 1 box lemon cake mix
  • 1 can blueberry pie filling
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup sugar
  • 3 eggs
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/4 cup butter, melted
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine cream cheese, sour cream, sugar, eggs, lemon juice, and lemon zest in a mixing bowl. Mix until smooth.
  3. Spread the blueberry pie filling evenly in the bottom of the prepared baking dish.
  4. Pour the cream cheese mixture over the blueberry layer.
  5. Prepare the lemon cake mix according to the package instructions, then pour it over the cream cheese layer.
  6. Drizzle the melted butter over the top.
  7. Bake for 40-45 minutes until the cake is golden brown and a toothpick inserted comes out clean.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat.
