A comforting and flavorful soup made with tender chicken, hearty orzo, and vibrant vegetables, brightened with a hint of lemon.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup orzo pasta
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and allow it to cook for another minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Next, add the cooked shredded chicken along with the orzo. Let it cook until the orzo is tender, about 8 to 10 minutes.
  6. Stir in the freshly squeezed lemon juice, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh chopped parsley.
