A quick and versatile lemon garlic dressing that brightens salads and marinates vegetables, ready in minutes.

Ingredients

  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1/2 cup olive oil (extra-virgin for flavor)
  • 2 garlic cloves, minced (or grated for a smoother texture)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey (or maple syrup for a vegan version)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Combine the fresh lemon juice, minced garlic, Dijon mustard, and honey in a mixing bowl. Whisk briefly so the honey begins to dissolve.
  2. Slowly stream in the olive oil while whisking constantly to emulsify the dressing.
  3. Season with salt and pepper to taste and give it one final whisk.
  4. Transfer to a jar or pour over your salad. Use immediately or chill briefly.

Notes

Store in an airtight container for up to 5 days. Shake or whisk to recombine if the oil separates.
