A vibrant and flavorful meal combining marinated chicken with sautéed zucchini, perfect for quick weeknight dinners.

  • 1 pound chicken thighs or breasts
  • 2 medium zucchinis, sliced
  • 1 lemon, juice and zest
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Combine olive oil, lemon juice, lemon zest, minced garlic, paprika, salt, and pepper in a bowl.
  2. Marinate the chicken in this mixture for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  4. Add sliced zucchini to the same skillet and sauté for 3-4 minutes until tender.
  5. Plate the sautéed zucchini alongside or under the chicken, garnish with fresh herbs, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
