A hearty, cheesy remake of a favorite featuring seasoned beef, rice, and fresh toppings wrapped in a warm tortilla.

Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or blend)
  • 1 packet taco seasoning
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded lettuce

Instructions

  1. Heat a skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no pink remains.
  2. Drain any excess fat from the pan, then return it to the heat. Add the taco seasoning and the amount of water called for on the packet. Stir and simmer until the sauce thickens and coats the beef.
  3. Warm your tortillas so they bend without cracking. Use a dry skillet over low heat for 20 to 30 seconds per side or microwave them between damp paper towels for 20 seconds.
  4. Lay a warm tortilla flat. Spoon a portion of the seasoned beef down the center, then add about 1/4 cup cooked rice and a sprinkle of shredded cheese.
  5. Top with a spoonful of sour cream, a little salsa, diced onions, tomatoes, and shredded lettuce. Keep the fillings centered to help roll neatly.
  6. Fold in the sides of the tortilla, then roll tightly from one end to the other to form a burrito. Serve immediately with extra salsa and sour cream for dipping.
