A comforting, low-carb casserole featuring tender shredded chicken and creamy cheese over riced cauliflower, baked until bubbly.

  • 23 cups cooked shredded chicken (about 2 large breasts or a rotisserie breast), cooled and shredded
  • 4 cups riced cauliflower (fresh riced or frozen, thawed and squeezed dry)
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1 cup shredded sharp cheddar (plus 1/2 cup extra for topping)
  • 1/3 cup grated Parmesan
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 teaspoon dried Italian seasoning (or 1/2 teaspoon each oregano and basil)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 large egg (optional)
  • 1/4 cup chopped fresh parsley or chives for garnish
  • Optional crunchy topping: 1/2 cup crushed beef rinds or 1/4 cup almond flour mixed with 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. If using raw chicken, season breasts with salt and pepper and roast at 400°F for 20–25 minutes until 165°F internal. Let cool and shred.
  3. Heat olive oil in a skillet over medium. Add onion and cook for 3–4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Add riced cauliflower to the skillet and sauté for 3–5 minutes to drive off moisture. Season with salt, pepper, and Italian seasoning.
  5. In a large bowl, whisk together softened cream cheese, sour cream, egg (if using), cheddar, and Parmesan until smooth.
  6. Stir shredded chicken and sautéed cauliflower mixture into the cheese mixture until evenly combined. Taste and adjust seasoning.
  7. Transfer mixture to the prepared baking dish. Smooth the top and sprinkle the remaining cheddar and chosen crunchy topping evenly.
  8. Bake uncovered for 20–25 minutes until the center is hot and the top is golden. For a crispier top, broil for 1–2 minutes while watching closely.
  9. Let rest for 5 minutes, garnish with parsley or chives, then serve.

Notes

For a dairy-free version, replace cream cheese and sour cream with dairy-free alternatives. Use garlic-infused oil to make it low-FODMAP. Mix in vegetables for additional nutrition.
