A savory low carb casserole that combines seasoned ground beef, sautéed peppers and onions, and creamy melted cheese, offering the bold flavors of a Philly cheesesteak.

  • 1 lb ground beef (80/20 or leaner)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a skillet over medium and add a splash of olive oil. Cook diced onions and bell pepper until softened, about 5 minutes.
  3. Add the ground beef to the skillet. Season with garlic powder, onion powder, salt, and pepper. Break up the meat and cook until browned, about 6 to 8 minutes.
  4. Remove the pan from heat. Stir in the softened cream cheese until smooth.
  5. Transfer the mixture to a greased casserole dish and spread it evenly.
  6. Sprinkle the shredded cheddar cheese over the top and place in the preheated oven. Bake for 20 to 25 minutes, until cheese is melted and bubbly.
  7. Let the casserole cool for 5 minutes before serving.

Notes

Serve with a crisp green salad or over cauliflower rice for an extra low carb option. Store leftovers in an airtight container for up to 4 days.
