Make-ahead breakfast burritos filled with scrambled eggs, beef sausage, and two kinds of cheese—perfect for busy mornings.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound beef sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk together eggs, milk, salt, and pepper.
  2. Heat vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook, stirring occasionally, until set but still moist.
  4. Remove the eggs from the skillet and set aside.
  5. Warm tortillas slightly to make them pliable.
  6. Layer each tortilla with scrambled eggs, crumbled beef sausage, cheddar cheese, and Monterey Jack cheese.
  7. Fold in the sides and roll tightly to form burritos.

Notes

Wrap each burrito tightly in plastic wrap and aluminum foil before freezing. They can be stored for up to three months.
