A vibrant, refreshing mango slaw that combines the sweetness of mangoes with crisp vegetables, perfect as a side dish or topping for tacos.

  • 2 ripe mangoes, julienned
  • 2 cups shredded cabbage
  • 1 red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Combine the julienned mangoes, shredded cabbage, sliced bell pepper, red onion, and cilantro in a large bowl.
  2. Whisk together the lime juice, honey, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the slaw and toss to combine thoroughly.
  4. Allow it to rest for at least 15 minutes before serving to enhance the flavors.

Notes

Choose ripe mangoes for the best flavor. Adjust the lime juice and honey to your taste. The slaw is vegan and can be made ahead of time, but add the dressing just before serving.
