A wholesome and vibrant dish that combines tender chicken with fresh vegetables, topped with creamy feta cheese.

Ingredients

  • 2 chicken breasts
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil
  • 1 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Sauté garlic, onion, and bell pepper until softened.
  4. Add zucchini slices and cook for another 5 minutes.
  5. Season with oregano, basil, salt, and pepper.
  6. Place the chicken breasts in a baking dish and surround them with the vegetable mixture.
  7. Top with feta cheese and cherry tomatoes.
  8. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.

Notes

This recipe can be customized by swapping feta for goat cheese or adding more vegetables. It also freezes well for longer storage.
