A vibrant one-pan dish combining lean chicken with fresh veggies and Mediterranean flavors, perfect for weeknight dinners.

  • 4 boneless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Feta cheese for topping (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a large sheet pan, surrounded by sliced zucchini, chopped bell pepper, and sliced red onion.
  3. Drizzle the vegetables and chicken with olive oil.
  4. Sprinkle the oregano, garlic powder, salt, and pepper over everything.
  5. Toss the mixture to coat all ingredients evenly.
  6. Arrange the chicken in the center of the pan and the vegetables around it.
  7. Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  8. If using, sprinkle feta cheese on top in the last 5 minutes of baking.

Notes

For best results, use a meat thermometer to check the chicken’s internal temperature. Feel free to sauté onions and bell peppers beforehand for added flavor.
