A vibrant and refreshing dish that combines al dente pasta with creamy feta cheese, crisp vegetables, and a light vinaigrette, perfect for lunches, picnics, or light dinners.

Ingredients

  • 2 cups pasta (any shape)
  • 1 cup feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling water according to package instructions until al dente.
  2. Drain the pasta in a colander, then let it cool completely.
  3. In a large bowl, combine the cooled pasta, feta cheese, cherry tomatoes, cucumber, red onion, and black olives.
  4. Drizzle with olive oil and lemon juice, tossing gently to combine.
  5. Season to taste with salt and pepper.

Notes

Refrigerate leftovers in an airtight container and consume within 3 to 5 days. Freezing is not recommended.
