A delicious blend of traditional quesadilla elements with vibrant Mediterranean ingredients, perfect for a quick meal.

Ingredients

  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked chicken (optional)
  • 1/4 cup sliced olives
  • 1/4 cup diced tomatoes
  • 1/4 cup spinach or arugula
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
  3. Add cooked chicken, olives, tomatoes, and spinach.
  4. Top with the remaining cheese and then place the second tortilla on top.
  5. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  6. Carefully flip the quesadilla and cook for another 3-4 minutes.

Notes

Use a non-stick skillet to prevent sticking. Feel free to substitute cooked chicken with other proteins or vegetables based on preference.
