Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion

A fast and flavorful dish blending Mediterranean ingredients into crispy quesadillas, perfect for a quick family dinner or game-day snack.

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. Combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and a pinch of black pepper in a mixing bowl.
  2. Lay one flour tortilla flat on a cutting board and spoon one-quarter of the filling onto half of the tortilla. Fold the empty half over the filling to create a half-moon.
  3. Heat a nonstick skillet over medium heat and add the olive oil. Swirl to coat the pan.
  4. Place a filled tortilla in the skillet and cook for 3 to 4 minutes until the bottom is golden and crisp, and the cheese begins to melt.
  5. Flip the quesadilla carefully and cook the other side for another 3 to 4 minutes until both sides are evenly browned and the cheeses are fully melted.
  6. Transfer to a cutting board, let rest for a minute, then slice into wedges and serve warm.

Notes

Serve with yogurt-dill sauce or cucumber-tomato salad. Can be made ahead and stored in the fridge.
