  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped cilantro for garnish

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Sauté onion, bell pepper, and garlic until soft, about 4–5 minutes.
  3. Brown the ground beef until it reaches an internal temperature of 160°F.
  4. Add diced potatoes, chili powder, cumin, salt, and pepper; mix well.
  5. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender.
  6. Stir in black beans and diced tomatoes; cook for an additional 5 minutes.

Notes

Easily modified with different beans or peppers based on pantry staples. For creaminess, consider adding beef broth.
