A soft, tender banana bread that’s perfect for breakfast or as a snack, utilizing overripe bananas for sweetness.

Ingredients

  • 3 ripe bananas (very spotty or mostly brown)
  • 1/3 cup melted butter (unsalted or salted)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (granulated or brown sugar)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the bananas in a mixing bowl until mostly smooth with a few lumps.
  3. Stir in the melted butter until combined.
  4. Add the baking soda and salt, mixing briefly.
  5. Mix in the sugar, beaten egg, and vanilla extract until well combined.
  6. Gently fold in the flour until no streaks remain.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60 to 65 minutes until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for maximum flavor. Store in an airtight container at room temperature for up to 2-3 days or refrigerate for up to a week.
