Simple Banana Bread

A comforting and moist banana bread made with ripe bananas, perfect for breakfast or as a gift.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line it with parchment.
  2. Peel and mash the ripe bananas in a mixing bowl with a fork until mostly smooth.
  3. Stir the melted butter into the mashed bananas until combined.
  4. Add the baking soda and a pinch of salt, stirring briefly to distribute.
  5. Mix in the sugar, beaten egg, and vanilla extract until blended.
  6. Fold in the flour gently just until no dry streaks remain; do not overmix.
  7. If using nuts or chocolate chips, fold them in now.
  8. Pour the batter into your prepared loaf pan and smooth the top.
  9. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  10. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a lighter loaf, replace up to 1/4 cup of flour with whole wheat pastry flour. For a dairy-free version, use oil and reduce quantity to 1/4 cup.
