A moist and delicious chocolate cake made with grated zucchini, perfect for sneaking in some vegetables while satisfying your sweet tooth.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
  3. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in chocolate chips if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Notes

For a twist, substitute chocolate chips with nuts, add cinnamon, or use flavored extracts for extra flavor.
