A moist and rich chocolate treat featuring grated zucchini, perfect for brunch or dessert.

Ingredients

  • 1 cup grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a mixing bowl. Mix well.
  3. Whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Squeeze out excess moisture from the grated zucchini for better texture. Consider adding nuts or different chocolate chips for variation.
